Caprese Quinoa

Matt's gone, so I am cooking for myself, which I hate. I love cooking, but cooking for yourself is really boring. I have lately gotten really into quinoa, which I have discovered is the perfect vessel for one dish meals. Perfect! Fast, easy, and healthy! 

I absolutely love Italian food, in pretty much any form. Caprese salad is one of the most well known Italians foods, and even looks like their flag. Caprese salad is slices of mozzarella cheese and tomatoes layered with basil leaves, and then topped with balsalmic vinaigeratte. These exact ingredients happen to be why I love Italian food so much! So why not put it in quinoa? Yes, please!

I'm sure this idea has been done before, so while I won't admit to "inventing" anything, I will say I did not use a recipe :) I love it when that happens!

All you have to do is cook your quinoa. Fluff it, then stir in tomatoes, mozzarella (the real stuff, please! SO much better!), and basil, sprinkle with pepper and salt, and drizzle with olive oil and balsalmic vinegar. Enjoy!

As you can see, Jack really wanted some, too :) Although that was probably mostly for the cheese.

My Dog is Spoiled...

...or at least my husband thinks he is. I'm still convinced that he's only given what a good dog deserves. Cough. 

Actually, he usually ends up with homemade treats because I have the itch to bake that I have not yet satisfied this week, but I don't want to make any more sweets for myself (chocolate bread pudding anyone?). Plus, it's a great way to use up the whole wheat flour in my pantry (just the right amount too!) and the bananas that are ripening far too quickly. Not to mention, my dog is really, REALLY good at the sad pouty eyes. Really good. 

Luckily for me, I just recently bought a dog bone cookie cutter just for this occasion! (See, Jack's not spoiled...) So I internet surfed (ok, I went on Pinterest) and found a recipe my friend Cari had pinned, so I tried it out!

 Not only did he get dog bones, but donuts as well! And nondescript circles

Even I liked them, although if they were for me, I would definitely add some sugar. But I can imagine you could make some yummy biscuits out of this. Anyways, next time I might try adding some Greek yogurt, just to make it my "own recipe" that I can post. I would also like to try an Applesauce Oatmeal version, a pumpkin and turkey version (for Thanksgiving!), and maybe a turkey and cheese version, too. The best part about these is there is nothing in here that us Homo sapiens can't eat, so it makes it easy to test taste, even though it might not be exactly to our liking. I'll keep you posted! Jack really liked these!

Jack's Birthday!

Whoot whoot, put on your party hats everyone, my puppy Jack is one year old today! He had absolutely no idea, of course, but I think he enjoyed. Best part? I HAD THE DAY OFF! Right on.

The day was all Jack oriented. At around 8 am, we went on a long walk before it got to hot. I headed off to the gym afterwards, but don't worry, a visit to PetSmart with the puppy in tow followed after that. He did really well, much to my surprise. He only jumped on the cashier at the beginning once. After that, he got way too tired and then just greeted everyone else excitedly, but no jumps. He got to pick out some toys.

He was pretty tired when we got back from PetSmart, so I headed off to the grocery store so I could get ingredients for the dog friendly cupcakes! Let me tell you, Jack LOVED those! When we went over to play with his best friends Merlin, Kita, and Akumaru, he swallowed an entire cupcake in one gulp. I'd say that's a success!

I found a recipe online for Peanut Butter Pupcakes. I tweaked it to my own liking. Here's my recipe:

2 ripe bananas
2 cups water
1 egg
1/2 tsp vanilla extract
3 cups whole wheat flour
1 tbsp baking powder
1 tbsp honey
1/2 cup peanut butter

about 1 cup Greek yogurt
about 3 tbsp cream cheese
peanut butter to taste

Mash the bananas together with a fork. Mix in all the other ingredients except the peanut butter. Once those ingredients are incorporated, mix in the peanut butter. Scoop the batter into a greased 12-count cupcake pan. (I made all 12 cupcakes). Bake at 350 for about 15 minutes until a toothpick goes through the center cleanly.

Make the frosting: mix together the yogurt, cream cheese, and peanut butter until smooth. Once the cupcakes are cooled, pipe the frosting onto the cupcakes. Top with a dog biscuit.

And voila, dog cupcakes I have no doubt your puppy will love!

The Sitting of the Puppies

I must admit, I'm rather ashamed of myself! I haven't written a blog post in awhile! This is not entirely my fault, but I'll get to that in second. Let's start off with what I have been up too lately.

I think the last time I wrote was right before I puppy sat for my friend Erin. She and her husband Brogan got to go house hunting in Little Rock, AR and I agreed to watch Loki for them. I have deemed him and Jack frenemies, so I had to keep Loki at his house, but between working, driving the dogs to the lake, and walking both of them (separately!) in the morning and at night, I was pretty beat and tired. And didn't get to do much else, so alas, no blogging. But Loki is a great little dog, and he and Jack play really well at the lake (just not in the house), so I had great fun doing that. Erin bought me some Starbucks blend coffee and a cupcake book (YAY!), so I'll do it again :) Unfortunately she leaves at the beginning of July. I'll definitely miss her when she leaves.

After that, I think I mainly have just been working. Which I absolutely hate. I've also been trying to finish a baby blanket for our friends Trent and Brandy, so that has kept my hands busy. I found time to squeeze in one cupcake making session with Nicole; we made Reese's Peanut Butter cupcakes and they were a big hit. It's amazing how even though I'm part time, I'm super busy. It's rather stressful, I don't understand how people do this with children. I will definitely not be working when we start having kids, I will not emotionally be able to handle that stress.

As I write this, I'm puppy sitting again. This time, though, Merlin and Jack are bestest buddies, and Merlin is our neighbor, so he's staying at the house with us. Jack didn't like it for the first 5 minutes or so, but since then he has adjusted. It's nice for me, though, since Merlin is entertaining him and they make each other tired. They're not very loud, either, which is great, unless they're fighting over the same toy. I have plenty of toys for both of them, but for seem reason they both always have to have the same one. And of course Jack isn't interested in a toy UNTIL Merlin has it. Puppies. It's so far been great, though. They walk well together on leashes, so later this evening I'll be able to walk them. Jack for some reason refuses to nap while Merlin is here, so they both crash at night. Super yay! I'll try to get a picture of them up soon, but Matt's friend has our memory card. Hopefully tomorrow!

Annnnd I Confirm My "Cat Person" Standing

Yes, ladies and gentlemen, cats may be less personable than dogs, but the last time I checked, they don't go out into the field and roll around in and proceed to eat other dog crap! GRRRRROOOOSSSSS! That is the only good thing about the 75 degree weather: I was able to take the hose to him.

Let's just say for the rest of the day, Jack will be on my Shit List.

Hueyisms

A Day in the Life at the Darnell's: Huey's POV

My day probably starts way earlier than theirs, since I have the run of the whole house- except the bedroom, where Mommy, Daddy, and The Dog are. They don't let me in. B*tches. They think I'll harrass The Dog or something like that. But it's never my fault. He just won't leave me alone. And I definitely don't provoke him. At all.

So at 6 am every morning, I nicely make my presence known outside the door. Because I'm hungry. But Mommy always lets The Dog outside first. I don't know why. It makes me mad because I'm hungry. So when she brings The Dog back inside and makes her way to my room to feed me, I make sure that she knows that I'm there by running in and out of her legs in front of her- and sometimes stopping- all the way to my bedroom. Sometimes she stumbles over me. Usually it's multiple times. I don't understand why she just can't walk gracefully. But at least she feeds me.

Then she proceeds to the kitchen to feed The Dog. Usually she ends up shutting me in the hallway when I come running out to the kitchen to help The Dog with his food. I don't know why. I'm still hungry.

So to punish her for not feeding me again, I make it very difficult for her to do her work. Mommy uses this thing called the laptop. It's very warm so I like to sleep on it. She doesn't like it when I do that. I don't know why. I'm just trying to tell her I need attention and I'm hungry. So usually I have to settle for her lap. Which is ok, because she makes sure The Dog leaves me alone. She also doesn't like it when I play with her yarn. I think it's called knitting???? She should be making that thing for me. But she keeps saying it's a Seahawk scarf. Whatever it is, I want it. But since I'm not going to get it, I'll just make sure it takes her a long time to do it. And every time Mommy goes to the kitchen, I make sure I go too. I try telling her nicely that I'm hungry, but she usually ends up saying something like "Shut the H*ll up already!" way louder than she needs too. So because she didn't feed me, I make sure to crawl into the refrigerator every time she opens it to keep her on her toes.

When I get bored or hungry, I like to play with The Dog. Funny thing is, he's kind of dumb. I like to provoke him, but when he starts playing with me, I start yelling REALLY loud and Mommy always comes and rescues me. Heehee! Stupid Dog. So somehow I need to work this to my advantage. I wonder if I start tearing apart the couch he'll get blamed for that too.

That's pretty much my life. Now if you'll excuse me, I need to go let Mommy know that I'm hungry. She never feeds me enough.

Lessons: Presented by Huey and Jack;8ui

So I know I've been kind of blogging a lot, but that's what happens when you have a husband who takes the car, it's too hot to play outside, you don't have too many friends in your present locale, and with the pets you have scrapbooking and knitting become way more difficult (especially when the cat's food and water dishes are on your scrapbooking table because the dog will eat kitty's food otherwise). Blogging provides me a way to get my creative juices flowing, since I have always loved writing creatively. I started writing books when I was in elementary school and it continued all the way through to college, even. I never finished any of them, but they weren't all that good or serious. I have since started this blog, where I find it much easier to write about my life experiences, which admittedly is rather boring, but hopefully my lovely rhetoric and caustic wit keeps everyone entertained (not likely, who am I kidding?!)

Anyways.

I know have a cat. You know this. But I have never had a cat and a dog at the same time. And since I'm still learning about all this dog stuff, these last few hours have been entertaining to say the least! I'm getting to know my animals pretty well, and I must say, even with as little time with these two as I've had, I'm beginning to understand that the cat vs. dog stereotypes are kind of true.

Let's begin. Little Huey is tiny. Extremely tiny. Right now, I'm guessing he weighs less than 2 pounds. He might not even weigh a pound. Needless to say, my twenty pound puppy is a little rough on him. But even though my kitty is only 8 weeks old, he's already your typical cat! I swear, this cat is egging the dog on, and when the dog gets too rough with him, he wants me to rescue him! Granted, the dog did start shaking the cat's head like he does with his stuffed toys so I did have to stop that immediately (poor kitty!), but I think it's mostly the cat's fault. But the dog gets in trouble. Poor Jack. Don't worry, we don't punish him for playing with the cat, we just have to say "NO!" when he gets to rough and then we put the cat away on his side of the house so Jack can calm down. And to give the little kitty a rest. I don't want them always stressed out so this works great.

Jack is a sneaky and smart little dog, but Huey is even smarter. We have a chair in our living room that Huey can get under completely, but Jack can now only get his head under. The cat will poke his head out and lure the dog over to the chair, then duck under. Well, Jack of course follows him, and moves around the chair whenever the cat moves positions. When Jack pulls is head out to move to the other side of the chair, the cat takes advantage of this and shoots out from under the chair and goes and hides on one of the dining room chairs. Jack, then, gets confused and tries to find the cat under the chair. Sometimes I don't think he realizes that the cat left!

I also think the cat likes to jump on everything right now because he already knows the dog can't get him! Granted we haven't corrected where he can and can't be yet, but with the puppy, I'm willing to look past the lounging on the dining room table since I know that's one of the places where the dog can't get him. And besides, he's a cat, so he might never learn that he's not allowed up there, at least when the humans are present.

Another lesson. Puppies get very, VERY distracted with a kitten in the house. I assumed this, but Jack will no longer play with any of his toys when the cat is present. Dude, his toys aren't nearly as exciting as a moving tiny speed monster! So we'll have several times a day where the cat will be on his side of the house so we can focus just on Jack and try and focus his energy into more training, since we still have a few things to learn. Training's probably going to get a little bit harder because of this, but thank goodness I am home all day and don't have anything else to do. Might as well train the dog, right?

I would also like to say that I've calmed down my worries with the puppy training. I'm one of those people that's such a perfectionist, I would rather quit while I'm ahead than continue on with something just to find out I'm no good and fail at it. I know this is crazy, but I'd rather be a quiter than a failure. I've always been this way. There were a few times these past weeks where I have gotten really upset with myself (and the puppy, I admit, although I never, EVER showed that to him) and wanted to give up training before I found out I suck at it. I just want my dog to be a good dog, I don't want a dog where all my friends and family refuse to come to my house because I have an insane dog. But I have finally figured it out. I AM a good dog trainer and my dog is SO smart. Let's face it. We have only had Jack for 3 weeks and he is already mostly potty trained (he does know to go to the door, but we still usually have at least one accident a day, that's usually our fault, but sometimes when he's super excited he gives no signal and just let's loose, lol), he sits and waits for food (we're working on the annoying barking he does prior to this when I'm filling his food dish), he can sit, lie down, high-five, shake, stand, and roll over, and he already walks really well on the leash! He knows "drop" when he has a leash in his hand, but nothing else, and he kind of knows leave it, and we're working on making his recall a lot better. So I can do it and I WILL continue to do because it's quite rewarding. Just keep the coffee coming in the mornings!

Training Has Begun!

Little Jack has been with us for less than 48 hours and he is learning so fast! He caught on to "sit" fairly quickly, and he knows "come here!", but his response time to that isn't always the best. Puppies apparently have ADD and sometimes sniffing that flower is WAY cooler than any attention I can possibly give him if he comes. It's a learning process, though, I'm sure he'll get better. Matt has also taught him the always-present-but-completely-useless-trick-at-the-present "shake." He has done "down" a few times as well, but it's not completely grilled into his brain yet, but in another day or two we should be golden. He also knows that I always ask him to sit before I feed him, but this morning he was so excited/hungry that he jumped up from his sit and banged his head on the bowl, thus resulting in the food going everywhere on the floor. He didn't seem to care. We'll have to work on him sitting a little bit farther away. Meal time is apparently a great motivator and it shouldn't take him long to pick up "sit, waaaaaaaaaaaaiiiiiiiit."

We also need to work on "leave it" and "drop it." Jack currently thinks the rug under my coffee table is a wonderful chew thing, so that will need to stop. He also enjoys my flowers, and naturally has enjoyed eating the purple one the best. Grrrrrrr. That WILL stop, dog! These commands are definitely harder, not necessarily for him, but for me, since it takes a lot more patience to teach these. And it's so enticing to continue chewing/play with whatever he is doing at that moment.

Definitely the hardest currently is crate training and housetraining. I did not realize that puppies have such SMALL bladders. He has to go pee AT LEAST every hour, sometimes every half hour. Jack's pretty good if we keep up with it, but puppies are SO GOOD at sneaking around the corner and going the one minute you're not watching them. I caught him this morning just as he was about to go, so I think we'll be getting there shortly. Fortunately it's easy to tell if he needs to go poo (and easier to schedule, since Jack only eats three meals a day, unlike water, which is always down for him), so we haven't had any of those messes to clean up yet. I used to hate the hardwood floors in this house (I much prefer carpet), but now I'm kind of liking the hardwoods.

Crate training hasn't really started yet, we are currently only crating him at night since one of us is always home. The noise/cry that comes out of this puppy at night is HORRIBLE! It's the saddest, most heart-wrenching sound (not to mention sounds a wee bit like nails on a chalkboard) I have EVER heard. I feel SO bad for him since he's so sad in there, but we DO NOT give in. We will try and talk softly to him from the bed to calm him down, but we don't let him out or go over and play with him through the bars, we mostly just ignore him. It feels like I'm being a bad mommy, but I know he will eventually get over it and settle down. The first night and last night lasted about the same length of time, I'm hoping tonight is a little bit shorter. I so hope my neighbor isn't too upset by it, but it should calm down soon.

While I'm away in Tupelo today with Cari, I'm going to have Matt feed him his lunch in his crate and keep throwing treats in there. He never sleeps in there except at night so I'm hoping we can get him to associate good things- like lunch!- with his crate. I'm also definitely going to pull his water at 7 tonight to alleviate the slight chance that the horrible cry emitting from Jack at night is because he has to pee. He woke me up at 4:45 this morning, but I don't really blame him. He did need to eliminate himself - pee AND poo - and I was stirring, so that probably excited him, too. He also might still be slightly on Atlanta time, which is an hour ahead, so I will only give him that excuse for a few more days. Until he's completely crate trained I don't want him to associate his crate with bad things, which is his current state of mind (crate = I'm locked in here without mommy and daddy! And no siblings!)

Judging on what little I currently know of his personality, I have a feeling he would sleep all night with us on the bed. That is NOT going to happen. At least right now. Besides, Matt and I only have a full bed, so there isn't even much room for the two of us, much less a puppy. And I really don't want him peeing on the bed. So far he hasn't peed in his crate, which is the large size, but I don't think that would happen on the bed. Bed privileges must be earned and not granted. He's also a little too small to jump off the bed quite yet, so in the crate he stays! Pray that he eventually catches on, I am 3 days sleepless and this isn't cool.

Puppies are easily twice - if not more!- the work of cats, but with less than 48 hours under my belt, I wouldn't give Jack up for anything. I will definitely miss the small cuteness/fuzziness/playfullness as he grows older, but I won't miss the long nights/early mornings, or the hyperness, or the constant need to pee. ;)

Bringing Puppy Home

Well folks, it is 5:30 in the morning on a Saturday. This must mean only one thing: Little Jack is now home! What a trip that was! Even though it was one of the most rewarding things I have ever done, I hope to never, ever do that again. God really wanted to make me work for this dog, and boy, did he ever.

I started the trip out super nervous, mostly because I was afraid of what was to come and I felt so bad for my puppy, sitting in a tiny carrier for 300 miles. Oh, and the fact that Atlanta is gigantic and I was driving through Friday afternoon insanity. Anyways, I made it through Atlanta fine, the AC was working (THANK YOU!) and I even felt good enough that a stop at the Alabama info rest area was not needed. Home free!

Not quite. I don't quite remember where the construction started, but I do know that was east of Birmingham and lasted FOR EVER. The entire state of Alabama is apparently under construction. Anyways, on the 4 lane divided freeway, it dropped down to one lane. I will never understand why they felt this was necessary during Friday afternoon rush hour, but whatever. There were miles and miles of cars backed up and at times we were just sitting there, on the asphalt in 94 degree Alabama heat. Yay. And I had to pee. And no exit in sight. As it turns out, it was prematurely becoming one lane. About a half mile before the actual lane closure, a semi truck had flipped onto it's side which brought the cars to one lane, too. . Once I passed that, I calmed down a lot. No matter the stress I was under- and my dog wasn't even making a noise!- that driver and his companies definitely had it a lot worse than I did at the moment. I pulled over at the nearest exit to use the restroom and then we were off again.

I got off about 40 miles after that to fill up at my usual place and take the dog out. As it turns out he needed to both potty and poo, so that was a great spot. He likes to follow me around and stay by myself. After filling up and letting Little Jack romp around for a bit, it was back in the carrier for him and onward.

I made it through Birmingham without any problems, then about 15 miles east of Tuscaloosa I stopped at a rest area to let Jack out again. He LOVED it. He ran around around with me, went potty, and just followed me around. Then it was homeward bound: only about an hour left of the trip!

West of Tuscaloosa, I wanted to really keep going, that there was this awesome obstacle in my way: scattered rain. And when I say rain, I don't mean Seattle like steady rain. I mean the skies opened up and the angels are spraying each other with fire hoses. I have never seen that much rain fall from the sky before. It was insane. I hate driving in rain, and I absolutely loathe driving in that downpour. Hydroplaning is now something I am very familiar with and understand how it feels, because I was sure doing a lot of that. Even after slowing down. The drivers here do not hesitate to slow down in torrential downpour which I commend and love. (Now I just need them to speed up during Seattle-like rain, you don't have to slow 20 below for that). Everyone gave everyone space (ok, all 3 of us, but hey, it's a small town) and kept the same speed.

And then it was home! This whole trip, Jack didn't make a single noise- I could not have asked for a better puppy. In fact, he only made noise when we put him down for the night. It lasted about 10 minutes, but he eventually calmed down. I did have to put an oscillating fan on him in the middle of the night, we were really hot and he was panting really hard. After I did that, though, I think he was able to sleep soundly because I didn't hear him panting so hard.

That trip certainly tested me. Many times I had to hold back tears and breath slowly to calm myself and tell myself over and over "you're ok, you're ok, you're ok." Talking to Jack helped, but at the same time I felt foolish. I hated everything about that trip except my puppy. He's such a good puppy.

And now he's up at 5 am. Georgia is an hour ahead, so considering he didn't wake up until 6 am his time, I'd say that's awesome. And after watching the guy pee his guts out when I took him out, I'm surprised he didn't start whining earlier than that, really. So this is my life now, up at 5 am and taking a puppy out to pee after not sleeping at all. Such is life. But now, I don't think I would change this at all. Every time he looks at me with that adorable little face, my heart melts.
