It's that time again! We're finally settled, so I can resume my cooking desires!
This week all of my recipes came of Giada de Laurentiis' cookbook, Giada at Home, where she mixes classic Itallian recipes and fresh California fare. Last night I decided to make her turkey meatloaf with feta and sundried tomatoes. It was SO GOOD. And super simple. I had to do a little chopping, but nothing hard, just sundried tomatoes, garlic, and some parsley. Mix everything in a bowl, bake, and BAM! Delicious, succulent meatloaf that needs no extra flavoring.
I also made some mashed cauliflower. I have seen it all over pinterest, and since I don't like cauliflower, I figured this would be the only way to make it where I would like it! I must say, it was fairly good! I went without a recipe, and used a blender, so it didn't turn out as well as I'd hoped, but I know exactly how to fix that for next time. Steam one head of cauliflower. Place in a blender AFTER you drain it well. A food processor might work better, but I hate mine, so blender it is! Add whatever you like to your mashed potatoes. I used milk, olive oil, salt, pepper, and garlic. Since the garlic is raw, go easy on that! Also only add a little milk and oil at a time, I went a little overboard on accident so it came out watery.
Overall, yummy meal! And healthy, too! Who would have thought meatloaf and "mashed potatoes" would be so good for you?!
