Peanuts and Pumpkins

I have learned some valuable lessons these past few days.

1. Both Matt and I are not fond of peanut sauce, a main Asian way to eat noodle dishes. Matt had told me before he didn't like them, but I had never tried them and really wanted to. I was hoping Matt had had a bad batch. But as it turned out, I don't really like it either. It's not that I hate it, I would just prefer something else. So I will never again make noodles with peanut sauce! At least I added chicken to it so it wasn't a total bust.

2. I am kind of having a love affair with pumpkin right now. The funny thing is, I've never had pumpkin except in pie (and I love me some pumpkin pie). But scrolling through my favorite blog Budget Bytes (y'all should check it out, it's amazing) I found a recipe for spicy pumpkin and coconut soup and I just had to try it. It's delicious, and SO EASY to make! I'm pretty sure I'm going to have to double batch it next time and freeze it in serving size containers to take as work lunches. Also on the same blog, I found baked pumpkin oatmeal. Made it. Yummy. Mine turned out slightly sweeter because of the yogurt I added, but next time I'll tone it down. Maybe then Matt will like it a little better. He liked the soup, though. So if any of you have favorite pumpkin recipes, or just other ways to eat pumpkin, let me know! I'm looking for more ideas.

3. Another thing I have learned. Having a cough for 3 days is so exhausting. And freaking annoying. Cough: GO AWAY! I'm sick- and tired!- of hacking up my lungs.

4. Mississippi sucks and I want to go home.
